Hummus is a great as a spread on sandwiches or burgers. You can also have it as a dip with fried, roasted or steamed vegetables and even with naan bread. You can almost have it with anything.
INGRIDIENTS (Serves 6-8 as a starter)
2 x k400g of chickpeas soaked overnight (reserve the liquid and a few chickpeas for decoration)
5 tsp sesame seeds
2 garlic cloves, crushed
1 tsp crushed sea salt
6 tbsp quality extra virgin olive oil (plus extra for drizzling) or use neutral oil like sunflower oil as alternative.
3½ tbsp freshly squeezed lemon juice
Paprika (optional)
Coriander or parsley leaves (optional)
Procedure
Roast sesame seeds and powder them finely. Rinse the chickpeas and cook them in pressure cooker, without salt, until they get easily mashed between your fingers and then in cold water. Tip into the food processor. Add sesame powder, crushed garlic, salt, lemon juice and seven tablespoons of the reserved liquid from the cans. Turn on the food processor and slowly pour in the oil while it runs.
When the mixture is fully combined and smooth, tip it into a serving dish. Drizzle with some more extra virgin olive oil and decorate with a few whole chickpeas. Sprinkle with paprika and finely chopped coriander or parsley leaves, for color.
